Cáceres

Founded by the ancient Romans, it retains widespread evidence of subsequent occupation by several different cultures. Its old town (Ciudad Monumental) has cobbled medieval streets, fortified houses and 16th-century palaces, and Gothic and Renaissance architecture. Encircled by 12th-century Moorish walls, it also has around 30 defensive towers, some occupied by nesting storks.
